do you need to make dinner in 10 minutes? instead of pasta and red sauce try pasta and Caponata, a cooked, tomato-based Italian appetizer with eggplant, celery, olives, onions and capers, so GOOD! it's got whole grains and veggies, so no guilt too! this is one of the fastest, easiest and yummiest recipes using only 2 ingredients (well 3 including olive oil) and all from Trader Joe's.

you need: - brown rice pasta - jar of Trader Giotto's Eggplant Caponata - a splush of olive oil

do it: - cook the pasta per the instructions on the package - stir in a little olive oil so the pasta doesn't stick - empty the jar of Caponata into the hot pasta, stir in and serve.
