easy dinner: tortilla pizzas!

Posted by MrKate on

this is a very easy and fun go-to dinner when you have no idea what to make. i always buy a package of whole wheat, sprouted grain or brown rice tortillas to keep in the fridge for wraps and burrito night...and tortilla pizza night!

get creative and use whatever you have in the fridge or your pantry. for vegan pizzas i usually like to keep a bag of Daiya around too to get the cheezy-ness. make them gluten free by using brown rice tortillas.

DO IT!:

preheat the oven to 375 degrees.

Tortilla Pizza (vegan) with Artichokes and Oregano

  1. spread tomato sauce on your tortilla
  2. sprinkle Daiya, artichoke hearts, sliced onions and dried oregano
  3. pop it in the oven to heat - around 7 minutes
Tortilla Pizza (vegan) Capers and Onions
  1. spread some tomato sauce on your tortilla
  2. add a sprinkle of sliced onions, daiya and capers
  3. pop it in the oven to heat - around 7 minutes
Tortilla Pizza (vegan) Hotdog Pizza this one will make my Italian Grandma shriek... but i guess the fact that i'm using tortillas is an Italian cooking sin already!
  1. spread a thin layer of bbq sauce on your tortilla
  2. add sliced tofu hot dogs, a sprinkle of Daiya, sliced onions and a drizzle of mustard
  3. pop it in the oven to heat - around 7 minutes
Tortilla Dessert Pizza (vegan)
  1. spread a layer of pumpkin butter or apple butter on your tortilla
  2. pop it in the oven to heat - around 7 minutes
