gazpacho it to me baby

last weekend i went to the flea market...it was really hot and i got an overwhelming craving for gazpacho. i've been wanting to try to make it so i figured this was as good a time as any. i stopped at the grocery store, grabbed these ingredients and went home and made enough for 2 days...it probably could have lasted longer but it was so good joey and i gobbled it up. this is the recipe i made up based on some i found online. the measurements are rough so cook like an italian and make it to taste!

Gazpacho

1 red onion

1 - 2 cups of cherry tomatoes

1 heriloom tomato (or other kind of tomato)

1 carrot

2 cucumbers

1 jalapeno (optional)

3 - 4 garlic cloves

3 cups of tomato juice

1/4 cup of white wine vinegar

1/4 cup of olive oil

salt and pepper to taste

you can add red bell peppers, but I don't like them raw, so I told them 'i naht gowna use yous'

chop all the vegetables individually in a food processor. combine into one bowl and add the liquid ingredients, garlic and salt and pepper to taste. mix well and let chill. serve with sliced or cubed avocado as garnish (optional).
