Peanut Butter Protein Bites

Hi again! I am so happy to be back sharing another delicious plant-based recipe with all of you!

The main ingredient in today’s post is peanut butter. I mean, just those two words alone have to have you wanting more, right?! I am all about having easy, healthy snacks on hand, and these Peanut Butter Protein Bites are the perfect example of that. I love popping one for a quick snack, a boost of energy before or after a workout, and even sometimes as a sweet (but healthy) dessert.

These bites are filled with protein, fiber, omega-3 fatty acids, antioxidants, vitamins and minerals, AND they taste like a peanut butter chocolate chip cookie. They are also (of course) 100% plant-based, gluten-free and refined sugar-free! So, needless to say they are pretty darn awesome.

The other thing I love about these bites is how easy they are to make. Only 10 simple ingredients, one bowl, a spoon, your hands, and absolutely no baking required. How stress-free is that?!

Note: Make sure to buy peanut butter that is unsweetened and doesn't contain any added hydrogenated oils. This goes for all nut butters!

Peanut Butter Protein Bites

(Makes 20-25 Bites)

Prep It:

1 cup creamy peanut butter 1/2 cup gluten-free rolled oats 1/4 cup unsweetened shredded coconut 1/4 cup cacao nibs 3 Tbs + 1 tsp pure maple syrup 2 Tbs ground flaxseed 1 Tbs + 1 tsp chia seeds 1/2 tsp cinnamon 1/2 tsp vanilla extract Pinch of sea salt

Do It!:

  1. Place all ingredients together in a bowl and mix until all are combined. Depending on the consistency of your peanut butter, you might need to throw the mix into the fridge for about 15 minutes to harden before forming them.
  2. Using a spoon, scoop the mixture and form into 1 inch balls, or whatever size you like. I would recommend "forming" them and not rolling them into balls, it's easier considering the consistency of the mixture.
  3. Store in an airtight container in the fridge for up to a week! Nibble as desired!
