Layered Chia Pudding Smoothie Parfait

Two things I love: good food and pretty food. This recipe is definitely both!

I start most days with a smoothie (try the delicious Survivor Smoothie) because I believe it is the best way to get a big boost of nutrients in one easy glass. And since I spend almost every morning enjoying these blended powerhouses, I am always looking for new ways to throw them together so I never get bored.

That's the thing that's so great about smoothies, though! There are about a million different combinations to chose from. Take this one, a blueberry-banana smoothie layered with an omega-3 and protein rich coconut chia pudding, sprinkled with some of my favorite superfood toppings! A winning start to the day if you ask me.

Layered Chia Pudding Smoothie Parfait

(Makes 1 Serving)

Prep it:

Smoothie: 1 medium banana, sliced then frozen 1/2 cup frozen blueberries 1/4 cup unsweetened vanilla almond milk Coconut Chia Pudding: 2 Tbs chia seeds 1 tsp unsweetened shredded coconut 1/2 cup unsweetened vanilla almond milk

Superfood Toppings: bee pollen (natural energy booster, high in B vitamins) hemp seeds (high in omega-3's and protein) goji berries (complete protein and high in vitamin C) coconut flakes (healthy fat) extra blueberries (antioxidants) almond butter (healthy fat, vitamin E) cinnamon (antioxidants, anti-inflammatory)

Do it!:

  1. In a small bowl, whisk together chia seeds, shredded coconut, and 1/2 cup almond milk. Cover and place in the fridge overnight.
  2. The next morning, blend frozen banana, blueberries, and 1/4 cup almond milk in a blender until it reaches a sorbet like consistency.
  3. In a medium size glass, layer the bottom with some extra frozen berries and fresh slices of banana, then top with chia pudding.
  4. Now layer the smoothie on top of the chia pudding and top with superfood toppings or whatever you like!
