Peanut Butter & Jelly for Breakfast! Healthy Chia Oats Recipe

Some combinations are so good that there about a million different ways to enjoy them. When it comes to peanut butter and jelly, that number might actually be a little closer to a billion. I could eat some form of PB&J every single day. Lately, my favorite iteration these breakfast Peanut Butter + Jelly Chia Oats!

I absolutely love oatmeal! It has always been one of my go-to morning meals. Oats are filled with tons of protein and fiber, and are proven to lower cholesterol which makes them a fantastic way to start the day.

Just like PB&J, oatmeal can also be enjoyed many different ways, but I think the most delicious way is by combining all three of these staples together. The addition of omega-3 rich chia seeds makes these PB&J oats even more nutritious. And when it comes to the blueberries ... can you say antioxidants?!

These oats are gluten, dairy, and refined sugar-free, require 6 simple ingredients (not including water), and take less than 10 minutes to make, prep included!

Peanut Butter & Jelly Chia Oats

(Makes 1 Serving)

Prep it:

1/2 cup gluten-free rolled oats 1/2 cup blueberries 2 Tbs unsweetened almond milk 1 Tbs chia seeds 1 Tbs raw peanut butter 1 tsp pure maple syrup or honey 1 1/4 cup water

Do it!:

  1. In a small saucepan, pour in the oats and water and cook on medium-high heat.
  2. Once the water has started to boil, add chia seeds and stir all ingredients together to combine, then reduce heat to medium-low.
  3. Next add blueberries and cook for another another 2-3 minutes or until you reach your desired oatmeal consistency.
  4. Pour oats into a bowl and top with peanut butter, almond milk, and natural sweetener of choice!
